Quick Chicken Carnitas

Power Foods Cookbook, page 122

My boyfriend decided that he was going to start eating healthier this year as well (finally!). I asked him to look through my cookbooks and mark the recipes that sounded good to him. This is one of his choices.

Quick Chicken Carnitas


Shred the cheese. 
Cook garlic, onion, and chicken until browned.
Add tomatoes, cumin, and chili powder.
Simmer.
Add cilantro. Spoon into a tortilla and sprinkle cheese on top.
Quick Gaspacho and Quick Chicken Carnitas.

If made to recipe and split into 4 servings, this recipe is 9 PointsPlus. There isn't as much wiggle room to reduce the PointsPlus value here, but you do have some options: omit the cheese, use low PointsPlus tortillas, use only one tortilla.


That lovely side dish you see is Quick Gaspacho. It's a low PointsPlus recipe that adds a lot of filling veggies to this meal.


This recipe definitely delivered on it's promise to be a quick meal, but I found it a little lacking in flavor. Adding the pepperjack helped, but wasn't quite enough to make this worth making again.
