Vegetable Stuffed Sole with Dill Butter

I had picked up the ingredients for this recipe before I went on my trip, so this was a delicious and easy dinner to pick up and make (when all I really wanted to do was crash).

Vegetable Stuffed Sole with Dill Butter

Cut the vegetables into matchsticks. Cook in the microwave until tender.
Sprinkle fish with salt. Wrap around a the veggies.
Mix butter, dill, and lemon zest together. Spread over fish.

As you can see from the lack of photos, this recipe had just a few amount of ingredients and was very quick to make. Sometimes I get a little leery making dishes with little direction for seasoning because I think they'll turn out bland. Not this one. With the dill butter and a spritz of lemon, this was delicious! I'd definitely make this one again.
