Baked Chicken Packets with Zucchini and Tomatoes

Power Foods Cookbook, page 108

This is a very easy meal to make and alter. Starting with chicken breast, add any vegetables and seasoning you want, then bake!

Slice the olives.
Cut the zucchini.
I chose to add yellow squash.
Cut tomato into wedges.
Cut basil.
Mix veggies together in a large bowl.
Place chicken on the foil.
Add veggies.
Fold into packets and bake.

If made to recipe and split into 4 servings, this recipe is 5 PointsPlus. You could easily split this into 5 servings to reduce the PointsPlus value. This would also be good served over rice, quinoa, or whole wheat pasta.


I've made a similar dish before and it was alright, but this recipe really hit the nail on the head. The chicken is tender and moist and the flavors of the vegetables are delicious. The great thing about this recipe is that you can easily alter it so the fillings are just right for you. Definitely consider marinating the meat in advance for some more flavor. Or make a veggie-only packet as a side!
